Delaware North Opens New Restaurant

Grant Grove Restaurant in Kings Canyon National Park has reopened after its recent renovation, which lasted for 10 months and cost $6.3 million. The ecofriendly reconstruction improved diners' views of Bradley Meadow, expanded seating and parking and meets LEED Gold standards.

The remodeled restaurant seats 225 diners and features indoor seating, an outdoor deck and a courtyard area with picnic tables. To-go items are available at a walk-up window.

What’s New & Noteworthy Around Colorado

It’s always fun to talk about new happenings around Colorado, and 2017 is proving to be a banner year for places of interest to groups.

In Aspen, Hotel Jerome is integrating the neighboring Aspen Times Building into the historic Hotel Jerome will expand the property’s guest capacity through the addition of eight new rooms and revitalization of the courtyard between the two buildings, including a repositioned pool, two hot tubs, two new meeting rooms, deck, lawn and patio. Plans also include a barbershop and speakeasy.

Ocean Place Resort and Spa Welcomes a New Executive Chef!

Guillermo Veloso has joined the team at Ocean Place Resort and Spa as their new executive chef. Veloso is no stranger to the region, being a New York City and northern Jersey native. 

Veloso has an extensive culinary career extending more than 35 years, but he has also spent time as an archaeologist and naturalist. He was the executive chef at Miami’s Yuca Restaurant and has also served as executive chef at Philadelphia’s Cuba Libre and the Please Touch Museum. 

Meet Tim Freeman, Executive Chef of Borealis

Tim Freeman’s 25-year culinary career included stops in Moscow, the Philippines and Portugal, before Nairobi, Kenya. From there, the 39-year-old plotted a return to the United States, first at Northern Hotel in Billings, Montana, before moving south to Borealis for the Hyatt Regency Aurora-Denver Conference Center’s opening in early 2016.

“My son, he was born in Nairobi,” says Freeman. “I had been out of the U.S. for 10 years—I had not set foot on U.S. soil. It was time to come home.”
