Food trucks may be mobile, but they aren’t going anywhere, since their popularity only seems to grow with each season. A New Jersey hotel is getting in on the fun! Along with over 18,000 sq. ft. of flexible meeting space, Embassy Suites by Hilton in Berkeley Heights, New Jersey, offers the Grain & Cane “Gastro Truck” as a fun option for a mid-meeting break or post-event dining option. The mobility of the truck allows for the hotel to have a smaller scale menu and adapt to guests’ changing tastes.

The Gastro Truck offers a variety of signature sandwiches, with highlights including the Short Dip featuring braised short rib, smoked provolone, crispy shallot, and horseradish spread and the CCBLT, a twist on the BLT featuring a fresh crab cake and old bay mayo. The menu can also be completely customized to meet groups’ varied needs.

The Residence Inn by Marriott Denver City Center recently announced the completion of a $6.2 million renovation of its guest suits and corridors. All 228 redesigned rooms contain artwork featuring Colorado landscapes and landmarks paired with a new color scheme of gold and gray with pops of bright blue.

One of my favorite things about spending time in Denver is exploring new options for groups and seeing existing venues that successfully keep things fresh and interesting.

The Renaissance Denver Stapleton Hotel recently announced the conclusion of a top-to-bottom, $15 million renovation. Overseen by SANDdesign, the renovation began in April 2017 and debuted a “Grand Re-Imagined Event” on Thursday, May 8. The revamp included all of the hotel’s 400 guest rooms, 40,000 square feet of meeting spaces and a new restaurant called the Fifty300.
